Despite this very unique name, the sushi presented in front of the customer does not turn, for that matter, even the plate does not turn. Instead, small dishes, mostly with two pieces of sushi each, are placed on a narrow conveyor belt, slowly moving around at eyes level, within arm's length of the customer.
Sushi is a food offering that has traditionally been rather difficult to price merely based on the ingredients. Thus there is a tradition in traditional sushi restaurants that there is no listed price. A customer trusts the chef as well as the reputation of the restaurant and chooses not to discuss price before ordering. In that sense, "revolving sushi" presents a new culture to this food offering: the price system is not only clear, but simple. Typically, there are only two or three different price levels of dishes, indicated by the color of the plate. A customer will directly pick up a dish and pile up the empty plates in front of him, finally arriving at the amount of the bill by counting the number and colour of plates consumed. A revolving sushi restaurant has a compact and efficient store layout. All the necessities for the meal, from soy sauce, ginger, wasabi to hot tea, cold water and table napkins are all placed nicely beside, or in front of, each place setting. It is a carefully designed space for a self-serve, convenient and comfortable meal. In short, revolving sushi is a modern delivery of fast food catering to a traditional Japanese taste. |
